Chipotle Chili

1 teaspoon olive oil; extra virgin
1/2 cup onion; chopped
3 clove garlic; minced
2 tablespoons chili powder
1 teaspoon chipolte pepper; minced
3 cup kidney beans; cooked
2 can tomato, stewed; chopped
4 oz green chile; drained
1 pepper
Saute the the onion and garlic in oil 3 to 5 minutes until the onion is tender; stir frequently. Add the remaining ingredients. Bring to a boil. Reduce the heat, and simmer for 30 minutes.
Can freeze remaining chipotle chiles.
