Hot Italian Sausage

1/2 cup red wine
1 teaspoon liquid smoke
2 clove garlic; minced
1 teaspoon white pepper
1/2 teaspoon thyme
1 teaspoon paprika
1/2 teaspoon fennel seeds; crushed
1/2 teaspoon cayenne
1/2 teaspoon red pepper
1 lb turkey, ground lean
1 cup oatmeal

Pour wine into a large bowl. Blend seasonings into the wine. Add turkey and oats. Mix sausage. Make 8 patties or links.

Add cayenne to taste.

Freezes well.

Yield: 8 servings
